LAB 10 - Apple delight, no waste in sight!

Today, we’re thrilled to introduce our latest creation: the "palet aux pommes." A biscuit that combines sweet pleasure (but not too sweet) with a responsible approach. This little gem, born in our Dandoy Lab, embodies everything we love: blending tradition with innovation and showing our commitment to more eco-friendly products.

For this "palet," we decided to do things differently (well, as usual...). Instead of throwing away the apple pomace, which we get from our friends at Appelfabriek and then ground into powder by Nextgrain, we’ve turned it into a key, delicious ingredient.

“Apple pomace is a hidden treasure,” says Marie Vial, the independent chef we worked with on this project. “It brings an intense baked apple flavor, naturally sweetens the recipe, and keeps the biscuit moist and crumbly without drying out.”

With her help, we created a "palet" that contains 23% apple pomace, proving that enjoyment and circular economy can go hand in hand. 

Made with local ingredients and through short supply chains, this biscuit is also low in gluten thanks to the use of spelt flour. We thought of everything so you can enjoy it guilt-free. And to make it extra special, we’ve added our signature flavors: cinnamon, cloves, and a touch of butter for a treat that’s 100% Dandoy.

Marie, who loves a good challenge, shared how this collaboration with Maison Dandoy pushed her out of her comfort zone: “It was my first time creating for large-scale production. Working in a lab with massive machines was a bit overwhelming at first, but the team was amazing, and we managed to stay true to my original tests.”

Even in a large lab, artisanal authenticity remains at the heart of what we do.

This "palet" is more than just a biscuit. It’s also a promise. A promise of a future where we reuse instead of waste, where every ingredient is valued. We don’t throw things away here—we transform them. And this first apple-based biscuit in our range is another step in that direction.

How to enjoy our "Palet aux pommes"?

Of course, you can pair it with anything you like, but if we can suggest something... Marie recommends enjoying it with vanilla ice cream or baked apple with salted butter. For a simpler treat, dip it in a London Fog (Earl Grey tea with steamed milk), and you’ll be hooked!
